This taco meat can be used for so many different things! Of course, the tacos are my favorite, but this recipe is also great for salads, burritos, enchiladas and more!
Healthy Chicken Tacos Ingredients
Using chicken tenderloins makes this recipe come together super quick and easy, however, if you only have whole chicken breasts on hand, I suggest dicing into bite size pieces before marinating for the best results.

How to prepare…
I like to use a medium frying pan so I have plenty of room to space the chicken out so it can get nice and brown and flavorful.
Any frying pan will do but I love these Hexclad pans for everything in my kitchen, these are perfect for browning the chicken tenderloins!One important step that some people forget is to let the meat rest. Anytime you are cooking any type of protein letting it rest for a 10-20 minutes after cooking is crucial to getting it super moist.
I cover mine with foil on a cutting board and just walk away for a while while I prepare other ingredients for my meal. Then I dice the chicken into nice smaller pieces for easy taco distribution.
Assembly Required
We all know how we like our tacos. I always have at minimum lettuce, cheese, onion and taco sauce.
When I want to be extra special, I put out sour cream, guacamole, hot sauce, salsa, tomatoes, black beans, refried beans, and tortilla chips to have a complete meal!

1 lb chicken tenderloins
1 tbsp Olive Oil
My Recipe for Easy Taco Seasoning (use 2 tbsp of mix and 1 tsp salt)
Medium frying pan
Directions
- Prepare the chicken by placing into a ziplock bag with the seasoning, salt, and olive oil. Allow to marinade for 30 minutes to overnight.

- Heat frying pan to a medium high heat and place tenderloins into hot pan.

- Cook until browned and internal temp reaches 165, flipping occassionally. Allow to rest for at least 5 minutes after cooking.

- After resting, dice chicken into small cubes.

- Enjoy in corn or flour shells with any topping of your choice!

- Chicken is great for chicken salads as a yummy salad topper.
- Chicken can be used for burritos as well.
