Chorizo Breakfast Casserole

This recipe will make enough for 2 to 4 people, but can easily be doubled for a large batch. This casserole is so yummy and leftovers are perfect for meal prepping! This chorizo breakfast casserole hits all the marks for cheesy, potato, yummy deliciousness!

Have you ever just craved a yummy breakfast casserole but had to refrain because it’s just you and you couldn’t possibly justify making a gigantic casserole for yourself?

This slimmed down recipe has got you covered! This chorizo breakfast casserole is the perfect solution for your breakfast craving needs.

This casserole is a perfect meal prep for busy weekdays or the prefect casserole to make on a Saturday and eat the leftovers Sunday!

The Ingredients for Chorizo Breakfast Casserole

So the sausage is entirely up to you. I am a big fan of chorizo because I love the spicy flavor of it, this works very well with regular breakfasts sausage as well.

For the cheese blend. I find that the blend of cheddar and mozzarella melt really well in this casserole, but you could absolutely use all cheddar, or pepper jack, or whatever you have on hand.

I like to shred my own cheese because I think the store bought shredded can melt sort of grainy, so I don’t really recommend using store bought shredded.

Tater tots really make this dish. I recommend using enough to cover the bottom of the pan. Everything will meld into them and the texture comes out very nice.

Putting it together

This casserole comes together quick and easy.

You start by browning your sausage on the stove.

I love these Hexclad pans for everything in my kitchen, these are perfect for browning meat and sausage!

Then you simply layer on your cheeses and cover with your egg mixture.

You cook the casserole till there is not anymore runny egg in the middle, this can take a little bit since your tater tots were frozen, so that does slow down the cook time.

You end up with this delicious, cheesy, potatoey (I know, not a word), and it’s the perfect start to your day!

The casserole is the perfect size for 2 or 3 people for when you’re craving breakfast casserole but don’t need to feed that many! But can also be doubled to feed more!

Ingredients

  • Equipment
  • 8×8 Baking dish

  • Casserole Ingredients
  • 1/2 lb breakfast sausage or chorizo sausage

  • Frozen Tater tots – enough to cover the bottom of your dish with one layer

  • 3/4 Cup Shredded Cheddar

  • 1/3 Cup Shredded Mozzarella

  • 5 eggs

  • 1 cup Milk

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 1 tsp Dried Parsely (optional)

  • Salt and Pepper to taste

  • *Double all ingredients to make a 9×13 to feed a crowd.

Directions

  • Preheat oven to 350 degrees. Lightly spray 8×8 baking dish with cooking spray.
  • In a skillet, brown sausage until fully cooked (drain if not using Chorizo).chorizo
  • Line the bottom of your baking dish with a single layer of tater tots. (Honestly, I don’t have enough here, really pack it in, but keep it a single layer.)tater tots
  • Put the cooked sausage on top of the tater tots in an even layer. chorizo casserole
  • Sprinkle with the cheddar cheese.chorizo casserole
  • Sprinkle with the mozzarella.chorizo casserole
  • Whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk.chorizo casserole
  • Pour egg mixture over tater tots mixture.chorizo casserole
  • Bake uncovered at 350 degrees for one hour, or until eggs have set in the middle.chorizo breakfast casserole

Notes

  • If you’re feeding a crowd, just double the ingredients and use a 9×13 baking dish.
  • If your eggs are not done in the middle after an hour, cover with foil and check again after 10 minutes.
  • Any kind of ground breakfast sausage can be used, but it really takes it to the next level if you use a spicy chorizo.
  • You can use other cheese blends to your liking, just use the measurements I have included. Try something fun and use pepper jack with your chorizo sausage.
