This deliciously flavorful recipe for easy curried chicken and broccoli is adapted from something my Mom used to make for us all the time growing up. I love the warm heat from the curry mixed with the cheesy broccoli.

Talk about a quick easy meal that comes together in just a few minutes! This casserole is hearty and a real crowd pleaser! Pair it with my recipe for oven white rice and it does not get any easier or more delicious than this!
For the ingredients, I start with my recipe for easy shredded chicken. This recipe makes quick work of the prep for this meal. I think shredded chicken works really well with this recipe, but if you want to boil the chicken and dice it up, that works too!
Next you have the broccoli, I love short cuts, so I use the steamable bags of broccoli and I do cook them in the microwave before I add to this dish, that way you are not adding too much extra moisture to the dish. Steaming cooks the broccoli and dries it out enough to add to the casserole without the extra water.
For the cream of chicken soup, I usually stick with the classic, but the lower sodium stuff works here too.
Because this is a curry recipe I really like to make this the star of the show. The recipe calls for 1 tablespoon, I usually add a touch more than that because I love the flavor. If you want to dial it back a little, feel free to reduce the amount.
For the cheese, I suggest using cheddar. I usually use a mild cheddar cheese and I always shred my own cheese because it melts so much better than the shredded cheese you get at the store. Nice and gooey and melty!
Putting together Easy Curried Chicken and Broccoli
This is a great weeknight meal because it comes together so quickly.
I like to mix the soup, mayo, curry, milk, salt and pepper in a large mixing bowl. Whisk it together thoroughly till completely blended.
Then you add the chicken and the broccoli and toss thoroughly till well combined. Add to your lightly greased casserole dish.
I just got this gorgeous casserole dish last month and love it!Next you cover generously with the cheese and into the oven it goes!
I love that this only has to bake for 30 minutes at 350 degrees to come out nice and bubbly cheesy!

Curried Chicken and Broccoli

2 Cups Shredded Chicken (my recipe for easy shredded chicken)
1 Bunch of fresh Broccoli cut into chunks or two 12 oz bag of frozen broccoli
2 Cans of Cream of Chicken Soup
1 Cup Mayonnaise
½ Cup Milk
1 tbsp. Curry Powder (more or less to taste)
2 Cups Shredded Cheddar Cheese
Salt and Pepper to taste
Directions
- Preheat Oven to 350 and grease 9×13 pan or casserole dish.
- Steam the broccoli or prepare according to frozen broccoli directions.
- In a separate bowl combine the soup, mayo, curry powder, milk and salt and pepper.


- Stir in the chicken and broccoli.

- Spread evenly in pan or casserole dish.

- Cover with cheese. Now is the not the time to be stingy!

- Bake uncovered for 30 minutes. Will come out looking delicious and bubbly!

Notes
- For a complete meal this is served best with white rice. This is also great served on a baked potato.
- Curry is a unique flavor, very warm and exotic. I like to go heavy handed on it, if you are not sure, I would start with less and see how it goes over with the family before adding more the next time.
