This Chopped Greek Salad is delicious all on it’s own or as a part of my Incredible Chicken Shawarma Feast!

I make this salad a little bit different than you are used to. I have always loved chopped salads, so I took that concept and applied it to the preparation of this salad.
For my version of this Greek Salad I use red onions, tomatoes, cucumber, and green pepper. I love to add a little feta cheese to really set it off!

This delicious take on Greek Salad is sure to be a crowd pleaser!
Ingredients
- Vinaigrette
1/2 cup extra virgin olive oil
3 tbsp red wine vinegar
1 tbsp lemon juice
1 tbsp dijon mustard
1 round tsp minced garlic
1 tbsp dried Italian Seasoning
1 tsp kosher salt
1/4 tsp black pepper
1 tsp honey, optional
- Salad
1 small red onion
3 Roma Tomatoes
1 Cucumber
1 Green pepper
1/4 cup crumbled Feta cheese (optional)
Directions
- For the Vinaigrette
- Add all the vinaigrette ingredients to a mason jar (or other lidded container you can shake).

- Close the lid and shake until the dressing is well mixed and thick.

- Use now or keep sealed in the refrigerator for up to 10 days. Shake again before using.
- For the salad
- Using a food chopper like the one pictured here, finely dice all the vegetables and put in a medium size bowl. Toss together.

- Add roughly half the vinaigrette to the bowl and combine.
- Add feta cheese if using.

- Allow to chill in fridge for a couple hours.
