I think a nice jar of tahini can be purchased for $6.99 and this will make many batches of hummus. So roughly $2.00 for this recipe of hummus, which is about the equivalent of what you would get as a side order at a Mediterranean restaurant.
Not to mention the fact that this hummus can be made to your liking with flavors and consistency.
When I first tried to make hummus at home it was a disaster. I put my chickpeas in the blender and just kept adding olive oil until I got my desired consistency. It.Was.Awful. I had no idea I was doing it totally wrong.
It is the cold water that makes hummus that light and fluffy consistency you want
This recipe is so simple, yet so delicious. You will find yourself making it all the time. Hummus makes a great snack to eat with carrot sticks, celery, pita chips, etc., so It’s great to have around!
Super Simple Hummus
This will be the only hummus recipe you will ever need!
Ingredients
1/3 cup good-quality tahini
1/4 to 1/2 cup cold water, or more if needed
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
3/4 teaspoon fine sea salt
2 medium cloves garlic, peeled and mashed lemon (2–3 tablespoons)
1 (15 ounce) can chickpeas*, rinsed and drained
More olive oil and smoked paprika for topping.
Directions
- Drain and rince the chickpeas in a strainer.

- Add all the ingedients except the water into a good blender.

- Begin to blend and drizzle water in until you have your desired texture, should be smooth and fluffy.

- Put in a nice dish that has a cover, coat the top heavily with olive oil and generously sprinkle with paprika.
