Incredible Chicken Shawarma
We are big fans of chicken shawarma, it is one of my absolute favorite foods. I make this once a week and usually have leftovers for a few days that I make wraps and pita sandwiches with.
I have been making shawarma for quite a few years and have tested many recipes, some have cinnamon, others have lots of tumeric, some have cloves and some use allspice. I came up with this spice blend based on my own preferences and feedback from my family. Side note, my son is not a big fan of turmeric!
Tzatziki Sauce

I think that tzatziki sauce is the perfect compliment to this incredible chicken shawarma. I am a dipper, so I use the tzatziki and the hummus when eating the chicken shawarma. Sometimes I put one or both in my wrap, other times I just have big glob of them on my plate I dip my fork in. Either way, I love this stuff. I perfected this recipe over time after many “fails”, flavorless, watery, not too much yogurt. So I have learned from my mistakes and you will find this tzatziki is simply perfection.
I attribute the texture and flavor of this tzatziki to a few things I really wanted to improve on tzatziki. First of all, I finely grind the cucumber and there is more of a cucumber to yogurt ratio. Second, I use vinegar instead of lemon juice. I used lemon juice for year and it just did not produce the results I was looking for. When I switched to vinegar, I thought, here you go, that was it. Makes a huge difference in the consistency and flavor and now I will never go back.
Lastly, I am fairly generous with the garlic and the salt in this recipe. Let’s face it, yogurt and cucumbers do not have a ton of flavor, so you need to really boost them up, the garlic ans salt will really elevate all the flavors and you will end up wanting to put this stuff on everything!

I think the last time I checked, hummus at the grocery store was upwards of $6.99. Do you know how much a can of chickpeas is? It’s .88 at Walmart. I think a nice jar of tahini can be purchased for $6.99 and this will make many batches of hummus. So roughly $2.00 for this recipe of hummus, which is about the equivalent of what you would get as a side order at a Mediterranean restaurant.
Not to mention the fact that this hummus can be made to your liking with flavors and consistency.
When I first tried to make hummus at home it was a disaster. I put my chickpeas in the blender and just kept adding olive oil until I got my desired consistency. It.Was.Awful. I had no idea I was doing it totally wrong.

This recipe is so simple, yet so delicious. You will find yourself making it all the time. Hummus makes a great snack to eat with carrot sticks, celery, pita chips, etc., so It’s great to have around!

I make this salad a little bit different than you are used to. I have always loved chopped salads, so I took that concept and applied it to the preparation of this salad.
For my version of this Greek Salad I use red onions, tomatoes, cucumber, and green pepper. I love to add a little feta cheese to really set it off!

Recipe for Oven Baked Buttery Rice Pilaf
To really make this a complete meal, I always make a pan of rice pilaf. This is a family favorite and something we have at least once or twice a week.
This rice really goes with just about everything, but pairing it with chicken shawarma is one of my favorites.
The thing I love the most about this rice is that it is made in the oven so that frees up the stove and it comes out perfect every time!

Chicken Shawarma
Course: DinnerDifficulty: EasyThis recipe for Chicken Shawarma is sure to satisfy your cravings for Mediterranean food!
Ingredients
1 tbsp Ground Cumin
1 tbsp Ground Coriander
1 tsp Turmeric Powder
1 tbsp Garlic Powder
1 tsp onion powder
1 tbsp Smoked Paprika
1/2 tsp Cayenne Pepper
1/2 tsp Ground cloves
1 tsp salt
2 lbs Boneless Skinless Chicken Thighs (or breasts)
1 tbsp Lemon juice
1/3 cup Olive Oil
Directions
- In a large mixing bowl combine the cumin, turmeric, coriander, garlic powder, cayenne pepper, paprika and cloves. Set aside the shawarma spice mix as you’ll need it later.

- Pat the chicken dry and thinly slice chicken meat into small bite-sized strips.

- Place the chicken strips into the mixing bowl and toss in shawarma spices, olive oil and lemon juice until the meat is fully coated.

- Cover and refrigerate for 3 hours or overnight to allow the chicken to marinate.
- Before you’re ready to eat, preheat the oven in your kitchen to 425 degrees. Take the chicken out of the fridge and let it sit at room temperature as the oven heats up.
- Spread the marinated chicken in one layer on a large oiled baking sheet. Roast for 20 minutes, tossing the chicken after it’s been in the oven for 10 minutes.

- For a more browned, crispier chicken, move the pan to the top rack and broil very briefly for 1-2 minutes.
- Remove roasted chicken from the oven and allow to rest for 5-10 minutes before serving.
