Do you ever have those mornings where you are feeling like you want to start your day with something healthy but the sound of oatmeal or yogurt just isn’t doing it for you? That is me most mornings, but the unfortunate thing is, most of the time we then default to eggs, potatoes, bacon, toast, or even biscuits and gravy (my personal fave).

When I am feeling like I am bloated and I need something that’s not sweet, I turn to this easy egg frittata as a somewhat healthy start to my day with all the warm cheesy goodness of an omelette but not all the butter and fat added, this breakfast is perfect for a great start to your day!

The great thing about this dish is that is comes together very quickly. These can also be made in advance as meal prep. They will last up to 5 days in the fridge or if tightly wrapped in saran wrap and put in a ziplock bag, they can also be frozen for up to 3 months! Easily reheated in the microwave after they are thawed, just wrap in paper towel and microwave for 1:30 to 2 minutes.

The nice thing about a frittata is that it is also very versatile, if you don’t like spinach, then use broccoli. If you want to add meat, crumbled sausage, diced ham, or crumbled bacon go great mixed into these as well.

Let’s Talk About Ingredients…

I love the ease and availability of frozen spinach, you can easily grab a handful of frozen spinach, put it in just about anything. This is a great way to level up any dish and get some added health benefits into your meal.

Another ingredient I usually always have on hand is mozzarella, this is a great addition to the frittata as it is low in calories and gives it that cheesy goodness we all love to have with breakfast.

Next we have the feta cheese. I don’t know about you, but I love feta. It has such a yummy bite to it and makes a great healthy addition to eggs, salads, pasta dishes and more!

Putting together this Easy Egg Frittata!

We start by sauteing the onions and spinach. You really need to do this to soften the onions and dry out any excess moisture in the spinach.

Separately, you need to whisk your eggs with your seasonings and make sure it is mixed well.

You then add in your cheeses and make sure everything is well incorporated.

Then you add your onions and spinach and get everything mixed up good!

I then put everything into my cute ramekins to make individual servings. It’s the perfect romantic breakfast for two, or alternatively, you can put it into a slightly larger dish and make one big frittata.

This little ramekins are perfect for these frittatas!

Let’s talk about the tomato, I personally like to infuse fruits or veggies wherever I can. Not to mention, it can be hard to use up all your fresh veggies in a timely fashion so they don’t go bad. I like to add the slice of tomato on top because I love cooked tomato, it adds an interesting effect to the dish and maybe you get a little bit more health benefit from it too. Let’s not forget it adds some good color too!

After this is finished baking, I like to let it sit out of the oven for at least 5 minutes just to allow any carryover cooking and it does make it a little easier to release from the baking dish.

If you want to be extra fancy, sprinkle on some extra feta at the end, along with any chives or green onions you may have sitting around. Don’t have either of those? A little sprinkle of dill works just as well for a bright finish too!

Ingredients

  • 5 eggs

  • 1/2 cup frozen chopped spinach

  • 1/4 cup finely diced onion

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 cup mozzarella

  • 1/4 cup crumbled feta

  • 2 slices tomato (optional)

  • 2 large ramekins

  • 1 tsp olive oil

  • Salt and pepper

  • Supplies
  • Oven Safe Ramekins

Directions

  • Preheat oven or toaster oven to 350 degrees.
  • In a small sauté pan add the olive oil, diced onion and frozen spinach, sauté until soft and all the moisture is cooked out of the spinach. egg frittata
  • In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt and pepper. egg frittata
  • Add in the feta and mozzarella and whisk together. egg frittata
  • Add the spinach mixture and whisk quickly to ensure it doesn’t cook the eggs.
  • Divide mixture between two 13 oz oven safe ramekins that have been greased. Top with slices tomato (optional).egg frittata
  • Bake at 350 for 30 minutes or until fully cooked throughout.
  • Garnish with a sprinkle of feta and some green onions (optional).egg frittata

Notes

  • I recommend letting these set for about 5 minutes to set up.
  • If you cannot release the frittata from the ramekin, slide butter knife around the edge to loosen.
