I have had a Kitchen Aid Mixer since I was 19. I have put some serious miles on that thing, but for the most part I let it do all the work for me when making dough, and cookies, and cakes. Never did I think it would help with the chore of shredding chicken, but sure enough, it came through on that too!

The recipe included diced chicken, but I was considering just tossing the boiled chicken in the mixer and letting it all blend together. That’s when I discovered, it would break the chicken up for me like it does the butter when I am making cookies, and the chips into the cookie dough.
It really only takes a minute or two in the mixer, you do not want to over mix, just let it get broken up well, over mixing may dry out the chicken.

minutesIt’s 4pm and you haven’t even thought about dinner yet! Oops! Have no fear, there are a ton of quick and easy recipes you can make using this very quick and easy shredded chicken recipe that comes together from frozen in less than 25 minutes.
Ingredients
Frozen or thawed pound of chicken breasts or tenderloins
Water
Medium pot for boiling
1 tsp Salt
- Equipment
Directions
- Place frozen chicken in the pot with enough water to cover it. Add the salt.
- Boil uncovered for 20 to 25 minutes until cooked thoroughly.

- Once fully cooked, remove chicken from pot and strain. Allow to cool for 5 minutes.

- Place chicken in stand mixer with paddle attachment.

- Slowly increase power to 4 or 5 and watch the magic happen!

- Continue until chicken is the correct consistency.

Notes
- If I am not going to use this chicken right away, I add about a cup of the water it boiled in to the shredded chicken to keep it from drying out.
- This chicken freezes very well, I recommend making in big batches and freezing for easy weeknight meals, I typically will vacuum seal mine, but putting into ziplock bags is a good alternative.
- If you do not have a stand mixer, it is possible to achieve this with a handheld mixer using the beater attachment.
