There is something so comforting about a delicious bowl of pasta with meat and cheese, especially on a chilli evening in the winter.
I know some people are team cheddar and some people are team parmesan when it comes to what goes on top the goulash, in my house, we are all team parmesan, but I can the appeal of adding some cheddar!
Ingredients for One Pot American Goulash
This recipe is simple, delicious and so completely easy to make. I love that it either feeds a crowd or is great for leftovers.
One of my favorite mainstays when I am craving a meaty pasta dish that has a good element of cheese. This is comfort in a bowl and it really starts with a good ground beef.
For this dish you don’t want a greasy beef, a nice lean 90/10 beef works well here because you don’t want all that pasta to absorb the grease, even though it’s comfort food, doesn’t mean it has to be unhealthy!
I get the desire to want to use a creative noodle option here, and I will not discourage you to do so, but for me, goulash needs to have an elbow macaroni!
Let’s talk about tomatoes! I love them, in all forms, I get that you want to use petite diced tomatoes, but that is not for goulash, you need that lovely jar of Italian stewed tomatoes, trust me, they are what makes this goulash really taste fabulous and give it that wonderful tomato flavor!
Preparing the Goulash
Well, the recipe does say one pot, so having one large pot is kind of important for this one!
This Hexclad large pot is perfect for everything even if this is the only Hexclad pan you have, you will find youself using it daily! You start off by boiling your elbow macaroni, I say 5 minutes and you’re good. This pasta is eventually going to cook more in the sauce later, so you do not want to overboil and end up with mushy pasta!
Get your pasta in a strainer, then get your beef and onions going in the same pot.
After the meat is all browned up, throw in the garlic and cook for a minute, then you add in everything else.
The key here is to let this mixture cook for at least 30 minutes or so before you even think about adding the pasta. This is going to allow the flavors to meld and cook the “canned” out of the tomatoes.
Now when you are ready to add the pasta, shortly before serving, the mixture may have thickened quite a bit and you might want to throw a cup of water in so the pasta has something to absorb.
Add in the pasta about 15 minutes before you are ready to serve so everything can combine well.
Now sprinkle on some cheese and serve with a beautiful side salad and some bread!
