Light & Simple Chicken Salad

This light & simple chicken salad is so easy to put together and has a refreshingly light taste. We enjoy it as a lighter salad that has no cheese, croutons, or heavy dressing. The crunchiness from the chow mein noodles, and slivered almonds is the perfect compliment to the light and tasty vinaigrette.

This salad was motivated by a salad my Aunt used to bring to most of our family gatherings. She was always good about making sure we at least had one thing there that was somewhat lighter amidst all the Holiday fare.

There is something about the light tanginess of the vinaigrette that allows the other elements to shine while complimenting them so very nicely.

Light & Simple Chicken Salad Ingredients

I love the crunchiness of the noodles, almonds, and crispness of the iceberg lettuce.

I use iceberg because it has the right texture for this salad. I try to chop it up very well before mixing because this salad works better as a chopped salad.

The Chow Mein Noodles really make this salad pop. They add an amazing crunch and flavor to this salad, so you do not miss the croutons! I use La Choy Chow Mein Noodles pictured here:

The slivered almonds could be replaced with sliced almonds if you have those on hand instead. I personally like the added crunch the slivered almonds in my salads.

The sesame seeds add a nice toasty flavor to this salad. I have mine in a shaker and usually shake them over the top, measuring with my heart. I like the nice toasty flavor of these Spice Island Toasted Sesame Seeds.

Also, the green onions are just another layer of flavor that make this light & simple chicken salad really full of well blended textures and flavors.

This vinaigrette is so simple and delicious, it is surprising that by simply combining canola oil, white wine vinegar, sugar, salt and pepper you get this beautiful light coating for your salad.

Putting it Together

This salad comes together to easily, you simply layer on the ingredients, starting with your lettuce and chicken.

Add on your delicious topping and then give it a good mix. Presto, you have the perfect light lunch, or side salad with dinner!

I love putting my salads in huge bowls so I can neatly toss everything together without making a mess and still get everything well blended.

Light & Simple Chicken Salad

This delicous light and simple salad will be your new go to for quick and easy meal prep lunches.

Ingredients

  • Ingredients for One Portion of Salad
  • 1/3 cup shredded chicken (my recipe for easy shredded chicken)

  • 2 Green onions, chopped

  • 2 cups chopped Iceburg Lettuce

  • 1/4 cup Chow Mein noodles

  • 1/4 cup slivered almonds

  • 1 tsp toasted sesame seeds

  • 1/4 cup Simple Vinaigrette (Recipe below)

  • Simple Vinaigrette
  • 1/2 cup Canola Oil

  • 3 tbsp White Wine Vinegar

  • 2 tsp sugar

  • 1/4 tsp salt

  • 1/4 tsp pepper

Directions

  • Begin by preparing the vinaigrette and setting aside. Combine all vinaigrette ingredients into a salad dressing shaker and shake well. This can be prepared a day or two in advance and kept in your refrigerator. You will need to take it out of the fridge for at least an hour before using.
  • Prepare shredded chicken (my recipe for easy shredded chicken).
  • Finely chop the iceburg lettuce and use kitchen shears to cut your green onions.
  • Assembly
  • Place the lettuce in a big salad bowl, followed by the shredded chicken.
  • Sprinkle the green onions, Chow Mein noodles, slivered almonds, and seasame seeds on top.
  • Drizzle the dressing over and mix thoroughly.
