Jump to RecipeOne of my favorite things is warm bowl of stew with a delicous piece of bread and butter or nice, hot roll. This isn’t just comfort food, this is food for the soul!
The best thing about this dish is how easy it comes together. All you have to do is cut up a few vegetables and toss everything in the pot.
The end result is a hot, deliciously flavorful stew with super tender beef and delicious broth. You can soak up every morsel with some warm bread with butter. Yummy!
Instant Pot Beef Stew
The ingredients are simple, you probably have them all at home right now.
We start of with a nice package of stew meat, double up if you have a lot of meat eaters at home.
I use carrots, onions, and potatoes as my veggies. You can absolutley add celery, peas, corn, green beans, and whatever other vegetable you enjoy in your stew.
Now I frequently use beef consome in my pot roast, french dip or stew recipes. All this is doing is elevating the flavor of the beef, and I LOVE IT! Also, if you do not have or do not want to use the red wine, feel free to deglaze with the beef consome, works just as well.
I like a nice beefy flavor, I use Better than Bouillon soup bases for all my broth needs. I like the Roasted Beef Base flavor for this recipe. Any beef broth will work though, so use your favorite.
You will note, there is not a lot of salt in this recipe. That is by design as the consome and broths are both salty. The only thing I salt is the beef cubes before I coat with flour, and that is just using a tiny bit of Lawry’s Seasoned Salt. I would highly recommend tasting after it is done cooking before adding any additional salt.
Of course, you cannot make Instant Pot Beef Stew without an Instant Pot. You can use your own verision of a pressure cooker, but I highly recommend the Intant Pot brand. I just had to replace my original Instant Pot that was several years and many, many uses old. It lasted forever and through all my wear and tear!

Instant Pot Beef Stew

Ingredients
1 to 2 pounds stew meat or chuck roast , cut into 1-inch pieces
1/4 cup flour
1 tsp seasoned salt
1 Tablespoon oil
3 medium russet or 5 yellow potatoes , cut into 1-inch pieces
1 large onion, chopped
2 teaspoons minced garlic
2 cups carrots, chopped
1 cups red cooking wine
2 Tablespoons Worcestershire
1 can beef consome
3 cups beef broth
1 tsp garlic powder
1 tsp onion powder
Black pepper to taste
2 teaspoons Italian Seasoning
2 tsp dried parsley
- To thicken if needed:
2 Tablespoons cornstarch
1/4 cup water
Directions
- Cut the beef into about 1-inch bite-size pieces or use pre-cut stew meat.
- Sprinkle meat with seasoned salt and toss in flour till coated.

- Chop the potatoes, onion, and carrots.
- On your Instant Pot or pressure cooker, press the Sauté button. Wait until “Hot” appears on the front of the Instant Pot. Then add oil to the inner pot.
- When the oil starts to shine, add the stew meat. Let it brown for a couple of minutes. Don’t cook it all the way through. The goal is to just brown the outside of the meat.

- Add the chopped onion and garlic to meat. Cook until the onions are translucent.

- Deglaze the pan by pouring in the wine. Scrape all the brown bits and anything stuck to the bottom of the pan using a wooden spoon. That adds flavor to the sauce and helps to prevent getting the “Burn” warning on the Instant Pot.

- Add the beef broth, Worcestershire, and beef consome, and remaining seasonings. I like to put it all in my measuring cup that has the broth in it.

- Add the potatoes and carrots.

- Pressure cook the beef stew with high pressure for about 35 minutes.
- Release the steam naturally for about 15 – 20 minutes. This time can vary.
- If the stew needs thickening, mix 2 tablespoons of corn starch with 1/4 cup of water and turn your Instant Pot back on Saute and add the corn starch mixture and stir until thickened.
- Enjoy with a slice of bread or fresh rolls.
